The festival celebrates Taiwan's best-known noodle soup with a multi-day competition and stalls at Yuanshan Flower Expo Park. Categories have included braised and clear-broth beef noodle soup. Admission is free, and food and merchandise on site are paid.

From 2019 the contest ran under the name 'Xiangwei International Grand Evaluation' rather than a festival. About 1,000 shops applied and 56 from north, central and south Taiwan, including five-star hotels, made the final held at Taipei City Hall on 24 September 2019. For the first time an international jury of food experts and gourmets tasted blind on flavour, creativity and broth. Royal Heritage (皇家傳承) won, ahead of Taiwan Yipin and Niu Jiangjun, plus ten selected shops.
